Farm to Fit Tomato Salad
Our Tomato Salad is light, refreshing, and the perfect side dish to chicken, fish, or grilled veggies! Typically we pair with our Whole 30 Chicken Shawarma Dinner, but it's so good — you could eat it plain.
Best part, there are minimal ingredients and no cooking involved! Here's what you need:
Ingredients:
- Roma Tomatoes - 3 cups (chopped)
- Red Onion - ¾ cups red onion (shaved)
- Olive Oil - About 1 tablespoon
- White Vinegar - About 1 tablespoon
- Salt & Pepper - to taste
- Mint - 1 teaspoon (chopped)
- Oregano - ½ teaspoon (chopped)
Instructions:
- Toss cut tomatoes with salt and pepper and allow them to sit at room temperature for 1-2 hours.
- Place shaved onions in cold water and allow to soak for 1-2 hours.
- Drain onions; toss with marinated tomatoes. Add remaining ingredients and toss to combine.
- Allow salad to chill overnight before serving. Toss again before serving.
