We think BBQ season is the best season! Good weather, friends, food — what could be better? To ensure you don’t show up to your next backyard picnic empty-handed, we rounded up our top three favorite summer side dishes:

1. Watermelon Feta Salad

Ingredients:

  • 3 lb watermelon seedless, chilled
  • 8 oz FETA cheese crumbled – sheep’s milk feta
  • ¾ cup fresh basil chopped
  • ⅓ cup extra virgin olive oil
  • 2 limes, juiced
  • Salt & Pepper to taste

Instructions: Whisk the olive oil, lime juice, and salt and pepper together in a small bowl and set aside. In a large bowl, mix your watermelon, feta, and fresh basil. Top with your dressing & enjoy! (refrigerate until ready to serve)

2. Summer Corn Salsa

Ingredients:

  • 4 ears corn on the cob or 4-5 cups frozen, thawed sweet corn
  • 1 avocado diced
  • 1 pint cherry tomatoes halved
  • ¼ cup finely chopped onion
  • 1 jalapeno seeds removed, finely diced
  • ⅓ cup finely chopped cilantro

Dressing:

  • ⅓ cup extra virgin olive oil (80ml)
  • 2 Tablespoons red wine vinegar
  • 1 Tablespoons lime juice
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon garlic powder

Instructions: Mix all of your dressing ingredients together in a small bowl and set aside. Mix together salsa ingredients in a large bowl, top with dressing, and enjoy! (refrigerate until ready to serve)

3. Balsamic Grilled Veggies

Ingredients:

  • 1 lb zucchini sliced lengthwise into shorter sticks
  • 1 lb bell peppers sliced into wide strips
  • 1 large red or white onion cut into 1/2 inch thick rounds
  • 1/3 cup Italian parsley or basil finely chopped

Dressing:

  • 2 tbsp olive oil extra virgin
  • 2 tbsp balsamic vinegar
  • 2 garlic cloves grated
  • Salt and pepper to taste

Instructions: In a small bowl whisk together olive oil, balsamic vinegar, grated garlic, and salt and pepper. Set aside while you grill your veggies. Grill your veggies to desired tenderness and then place on a baking sheet or serving dish. Drizzle balsamic mixture over your veggies and top with herbs. Enjoy!
