Plant Based Recipes To Get You Ready For Fall

Whether you are ready or not, we are less than two weeks away from the official start of fall (September 22) which means it's time for warming spices, heart soups, and lots of pumpkins!

Here are two quick & simple plant based recipes you can try at home to get you in the autumn mood:

1. Butternut Squash Soup:

  • Ingredients:
    • 1 medium butternut squash, peeled and cubed
    • 1 onion, chopped
    • 2 cloves garlic, minced
    • 4 cups vegetable broth
    • 2 tbsp olive oil
    • Salt and pepper to taste
  • Instructions:
    1. Heat olive oil in a pot, add onions and garlic, sauté until soft.
    2. Add butternut squash and vegetable broth, bring to a boil, then simmer until squash is tender.
    3. Use an immersion blender to puree the soup until smooth.
    4. Season with salt and pepper, serve hot.

2. Roasted Autumn Vegetables:

  • Ingredients:
    • Assorted fall vegetables (e.g., carrots, sweet potatoes, Brussels sprouts)
    • 2 tbsp olive oil
    • 2 tsp dried rosemary
    • Salt and pepper to taste
  • Instructions:
    1. Preheat oven to 400°F (200°C).
    2. Cut vegetables into bite-sized pieces and place them on a baking sheet.
    3. Drizzle with olive oil, sprinkle rosemary, salt, and pepper.
    4. Toss to coat evenly and spread out in a single layer.
    5. Roast for 25-30 minutes or until vegetables are tender and slightly crispy.
